Cooking vegan can be delicious. Maybe the reason everyone isn’t vegan yet is that they think of all the things they have to give up: eggs, dairy, meat, fish, honey, etc. However, there are many substitutes for these non-vegan products. You can make food that is delicious and nutritious while still being vegan. Here are some substitutes for eggs and dairy.
There are many commercial egg substitutes that you can find in a grocery store. However, some contain egg and some don’t work for baking and cooking. Here are a few egg substitutes.
Flax eggs: Flax eggs are made of flaxseed meal and water. Flaxseed produce a gel when they absorb water, making it a great egg substitute. Chia seed does the same so you can try that if you don’t have flax. To make one egg, mix a tablespoon of ground flaxseed or chia and 2-3 tablespoons of water. Let it soak up the liquid for a few minutes. These work well with baking.
Baking without eggs: I’ve heard that half a banana works for one egg, though I’ve never tried it. It might taste mildly like a banana. You can also use a flax egg for baking. I’ve also heard that 1/4 cup of applesauce for one egg works as well.
Milk: This is easy. You’ll find all kinds of milk in a grocery store, like almond milk, cashew milk, rice milk, soy milk, hazelnut milk, and hemp milk. You can even make your own milk by soaking nuts in water overnight, then blending them in water in the morning. If you happen to be allergic to nuts, you can buy or make oat milk. Cheese: There is vegan cheese that you can find at your grocery store. Nutritional yeast tastes like parmesan, and it contains vitamin B12, a vitamin only found in animal products. You can also make your own. Here are a few recipes:
Chocolate: We all love chocolate. Fortunately, there is vegan chocolate! I like this recipe from Minimalist Baker. It contains only three ingredients: coconut oil, cocoa or cacao, and maple or agave syrup. There is nut-free vegan chocolate, but I can’t find a recipe.
Butter: You can find vegan butter in a grocery store or you can make your own. You can also use vegetable oil instead of butter in cooking (one cup butter = 3/4 cup vegetable oil).
Ice cream: There is a variety of dairy-free ice creams out there, or you can make your own. I have made vegan ice cream myself, and it is delicious! Here are a few recipes that I tried:
Other Dairy Products:
Cream – can be substituted with coconut cream. Place a can of full-fat coconut milk in the freezer overnight. Scoop the fat out of the can and use it as a non-dairy substitute.
